What’s New?

Things here have been busy lately. I don’t think I mentioned it before, but I started working about 6 weeks ago at an institution on post. I don’t want to give out too many details because this isn’t a private blog and there are some crazy people out there! Anyway, the first few weeks were really hectic since we only had one car and Michael was working odd hours to prepare for a training exercise. Korea is weird in that you are only allowed one vehicle and must submit paperwork to be approved for a second car. Fortunately the paperwork was approved and we were able to get another car a few weeks ago. Since most service members are only here for a year long assignment, they tend to buy a cheap car ( commonly referred to as a hooptie) that will go from point A to point B for a year and resell them when they leave. Our second car is exactly that and we are keeping our fingers crossed that it lasts us another two years. Michael gets to drive the 1996 Hyundai Avante station wagon and I get to keep the 2011 Hyundai. Sometimes life isn’t fair 🙂

Since we’ve both been busy with work, we really haven’t done much of anything on the weekends. If Michael isn’t working, he’s exhausted and just wanting to stay home and relax. Things will start to slow down toward the end of the month, just in time for our first visitors, Michael’s mom and (hopefully) Cooper!

In the meantime, here’s a Blueberry and Raspberry Muffin recipe I made the other day. I wrapped them in saran wrap and froze them. They are a great thing for us to grab in the morning for breakfast. The first time I made them I followed the recipe almost exactly, but I’ve played around with the texture a bit and found a winning combination. Enjoy!

Blueberry and Raspberry Muffins
Adapted from Mango & Tomato

1 C. flour
1 C. almond flour
1/2 C. oatmeal
1/4 C. sugar
1/4 C. brown sugar
1 Tbsp. baking soda
1 C. milk
1 egg
2 Tbsp coconut oil
11/2 tsp vanilla
1/2 C. blueberries
1/2 C. raspberries

Crumb Topping:

1/2 C. flour
1/3 C. sugar
4 Tbsp. melted butter

Preheat oven to 400 degrees and line muffin tins with paper cups. Mix the dry ingredients in a large bowl. Add milk, egg, oil and vanilla and stir until just combined. Gently fold in berries. Fill muffin tins 2/3 full and top with  butter streusel mixture. Bake for 20-25 minutes.
